چکیده

چکیده
زمینه و هدف: فلزات سنگین به دلیل قابلیت تجمع زیستی در بدن ماهیان، می­توانند خطر جدی برای امنیت غذایی محسوب شوند. از این رو با توجه به نقش مهمی که ماهی­ها در تغذیه انسان دارند، بررسی غلظت فلزات سنگین در بخش خوراکی ماهی ضروری به نظر می­رسد، لذا مطالعه حاضر با هدف تعیین غلظت تجمع‌یافته عناصر سنگین جیوه، سرب و کادمیوم در بافت عضله ماهیان هوور، شیر و تیلاپیا در شهرستان جیرفت انجام گرفت.  
مواد و روش­ها: به منظور بررسی غلظت فلزات سنگین جیوه، سرب و کادمیوم در بافت عضله 3 ماهی شیر، هوور و تیلاپیا، تعداد 20 عدد از هر ماهی به صورت تصادفی از ماهی­ فروشی­های شهرستان جیرفت در زمستان 1396 تهیه شد. نمونه­ها به روش هضم اسیدی آماده شدند. تجزیه و تحلیل داده­ها با استفاده از نرم‌افزار آماری اس پی اس اس، ورژن 19 و آزمون‌های تجزیه واریانس و تی (تک گروهی) انجام شد. میزان p‌ کمتر از 05/0 معنی‌دار در نظر گرفته شد.
یافته­ها: بین میزان تجمع فلزات سرب و کادمیوم در بافت عضله شیر، هوور و تیلاپیا اختلاف معنی‌داری وجود داشت (0/05>p). میزان تجمع سرب در ماهیان شیر، تیلاپیا و هوور به‌ترتیب 0/07±0/19، 0/66±0/81 و 0/43±0/47 و غلظت کادمیوم نیز در ماهی شیر، هوور و تیلاپیا به‌ترتیب 0/26± 0/49، 0/22±1/35 و 0/23±1/52 میکروگرم بر گرم به‌دست آمد، اما بین میزان تجمع جیوه در بافت عضله این سه ماهی اختلاف معنی­داری مشاهده نشد (0/05≤p).
نتیجه­گیری: غلظت جیوه در بافت عضله ماهیان مورد بررسی پایین­تر از استاندارد جهانی بود، اما غلظت دو فلز کادمیوم و سرب در بافت ماهیان تیلاپیا و هوور بالاتر از استاندارد جهانی بود.

چکیده [English]

Background and purpose: Heavy metals can be serious threat to food security because of the ability to accumulte in the body of fish. Therefore, considering the important role of fish play in human nutrition, the concentration of heavy metals, especially in the edible part of the fish, is necessary.
Materials and methods: In order to investigate the concentration of heavy metals mercury, lead and cadmium in muscle tissue of three fish species, Tuna )Scomberomoruscommerson(, Tap)Thunnustonggol (and tilapia due (Oreochromisniloticus) 20 pieces of fish were randomly collected from fish sailes in Jiroft city in winter 2017. samples were prepared by acid digestion. Data analysis was performed using SPSS 19 software, ANOVA and t-test. The presence or absence of significant difference was determined at 5% level (P <0.05).
Results: The results showed that there is a significant difference between the accumulation of lead and cadmium in Tuna, Tap and tilapia muscle tissue (p <0/05) and the rate of lead accumulation in the tuna Conclusion:The concentration of mercury in the fish muscle tissue was lower than the global standard but the two metals of cadmium and lead in the tissues of Tilapia and tap were higher than the global standard.
